1 bag of Jersey Royal potatoes, chopped into quarters

4 tablespoon of mayonnaise

1 heaped tablespoon of soured cream

1 teaspoon honey

1 teaspoon of minced garlic

1 teaspoon of American mustard

Squeeze of half of a lemon

1 handful of fresh parsley, finely chopped

1 small red onion, finely chopped

8-10 slices of streaky bacon (the more the merrier though really 😅)

Plenty of salt and pepper

When i was in Greece last week i lived on this creamy honey and mustard potato salad so asked the chefs what was in it so i could recreate it and here it is. Tastes identical!
