Preheat your oven to 400°F (200°C). Trim the woody ends off the asparagus by snapping them or cutting them with a knife. Place the spears on a baking sheet and drizzle with 2 tablespoons of olive oil. Season with salt and pepper, then toss to coat evenly. Spread the asparagus in a single layer and roast for 10–12 minutes, depending on thickness, until tender but still slightly crisp. Remove from the oven and let cool slightly.
While the asparagus is roasting, whisk together the balsamic vinegar, honey, and Dijon mustard in a small bowl. Slowly pour in the olive oil while continuously whisking to emulsify the dressing. Season with salt and pepper to taste. Set aside.
In a large serving bowl, add the mixed greens or arugula. Top with roasted asparagus spears and crumbled goat cheese. If using optional ingredients like nuts or dried fruit, sprinkle them over the salad now.
Drizzle the honey balsamic dressing over the salad just before serving. Toss gently if desired, or serve the dressing on the side so each person can adjust the amount to their liking. Serve immediately and enjoy the fresh, vibrant flavors!
