Healthy Tiramisu Brownies
  1. Preheat oven to 325°F (165°C) and line or spray an 8x8" baking dish.

  2. In a bowl, mix the Greek yogurt, egg, espresso, and vanilla extract.

  3. Add cocoa powder, oat flour, protein powder, sweetener, baking powder, and salt. Stir until combined. The batter will be thick.

  4. Pour the batter into the prepared pan and spread evenly.

  5. Bake for 15-18 minutes, or until a toothpick comes out with a few moist crumbs. Do not overbake! Let cool completely.

  6. In a bowl, beat together cream cheese, Greek yogurt, protein powder, sweetener, and espresso until smooth and creamy.

  7. Spread the cream layer evenly over the cooled brownie base.

  8. Dust with cocoa powder using a fine mesh sieve.

  9. Chill for at least 1 hour (or overnight) before slicing into 9 squares.
