Garlic Shrimp Fried Rice
  1. Mix the shrimp with minced garlic, salt, white pepper, and cornstarch. Let it marinate for at least 15 minutes.

  2. In a bowl, crack and beat 4 eggs and set them aside.

  3. In a large pan or wok, add 1 tbsp of oil. Saute marinated shrimp for a few minutes until shrimp are pink on both sides. Transfer to a plate and set aside.

  4. In the same pan, heat another tbsp of oil. Add minced garlic and white parts of green onion, saute for a min until fragrant. Pour beaten eggs and scramble for 2-3 min until eggs are cooked through.

  5. Add frozen vegetables, day-old rice, and cooked shrimp. Then add soy sauce, salt, white pepper, sugar, and chicken powder. Mix well and stir-fry for a few minutes until the rice is dry and crispy.

  6. Throw the remaining green parts of green onion. Toss everything together until well combined and heated through. Serve hot and enjoy!
