Mix the shrimp with minced garlic, salt, white pepper, and cornstarch. Let it marinate for at least 15 minutes.
In a bowl, crack and beat 4 eggs and set them aside.
In a large pan or wok, add 1 tbsp of oil. Saute marinated shrimp for a few minutes until shrimp are pink on both sides. Transfer to a plate and set aside.
In the same pan, heat another tbsp of oil. Add minced garlic and white parts of green onion, saute for a min until fragrant. Pour beaten eggs and scramble for 2-3 min until eggs are cooked through.
Add frozen vegetables, day-old rice, and cooked shrimp. Then add soy sauce, salt, white pepper, sugar, and chicken powder. Mix well and stir-fry for a few minutes until the rice is dry and crispy.
Throw the remaining green parts of green onion. Toss everything together until well combined and heated through. Serve hot and enjoy!
