Neil Perry’s King Prawn, Mango And Hazelnut Salad
  1. For hazelnut-lime dressing, combine all ingredients in a screw-top jar, season to taste and shake to combine.

  2. Combine the king prawns, witlof, lettuce, mango and shredded mint in a large bowl. Dress with half the dressing and gently toss to combine. Divide among serving plates, drizzle with remaining dressing. Scatter with hazelnuts and extra mint to serve.
