Zucchini And Spinach Tots
  1. Shred the zucchini using a grater. Wrap it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.

  2. In a large bowl, combine the shredded zucchini, chopped red onion, spinach, salt, pepper, oregano, garlic powder, olive oil, chickpea flour, and flax seeds. Mix well until a cohesive mixture forms.

  3. Form the mixture into 8 medium or 16 small balls or cylindrical tots using wet hands.

  4. Preheat your air fryer to 200°C (390°F). Place the tots in a single layer in the lined air fryer basket. Air fry for 20 minutes, flipping halfway through, until golden and crisp.

  5. Let cool slightly, then serve with your favorite dipping sauce.
