Brown meat with pepper, onion, and olive oil
Add chili seasonings, cumin, garlic powder, onion powder, smoked paprika, chipotle chili powder and salt
Add pumpkin, beans and tomatoes: when meat is cooked through and veggies are tender (15 min), add pumpkin, beans and tomatoes.
Cover and simmer 15-20 min.
Garnish (cilantro, sour cream, avocado, cheese (DF) etc.
Refrigerate leftovers 3-4 days or freeze for 2 months
