Pumpkin Chili
  1. Brown meat with pepper, onion, and olive oil

  2. Add chili seasonings, cumin, garlic powder, onion powder, smoked paprika, chipotle chili powder and salt

  3. Add pumpkin, beans and tomatoes: when meat is cooked through and veggies are tender (15 min), add pumpkin, beans and tomatoes.

  4. Cover and simmer 15-20 min.

  5. Garnish (cilantro, sour cream, avocado, cheese (DF) etc.

  6. Refrigerate leftovers 3-4 days or freeze for 2 months
