Healthy Date And Walnut Cake
  1. Soak 2 cups of dates in hot water for one hour

  2. Peel the dates and remove the pits

  3. Save 1 tbsp of the soaking water and add to the food processor

  4. Process the dates finely and set aside

  5. In a clean bowl, use a hand whisk to mix the eggs and dates

  6. Flavor the mixture with cinnamon and vanilla extract

  7. Add the very soft butter and mix well

  8. Add the almond flour and baking powder to the mixture

  9. Pour the batter into a well greased 8 or 9 inch pan

  10. Bake at 350 degrees F for 30 minutes or until a toothpick inserted comes out clean

  11. Serve warm
