Fondant Potatoes
  1. Peel and slice the potatoes into 1-inch rounds

  2. Soak the potato slices in water for 20 minutes to draw out the starch

  3. Smash 10 cloves of garlic

  4. Pat the potato slices dry and season with salt and pepper

  5. Add high smoke oil to a pan and sear the potatoes for 3-4 minutes per side

  6. Turn the heat down, add the butter, rosemary, thyme, and garlic

  7. Pour in ½ cup of chicken stock to partially submerge the potatoes

  8. Bring to a simmer, then transfer to a 400°F oven for 15-20 minutes

  9. The potatoes should be fork-tender, super buttery, and flavorful
