Roasted Cauliflower with Garlicky Yogurt

  1. Pre-heat the oven to 200 c. Bring a large pot of salted water to a boil. Add cauliflower, cover, and cook for 6-8 minutes. Check to see if ready by poking the stem with a knife.

  2. Remove to sheet tray, and steam dry in over for 10 minutes.

  3. Cover with extra virgin olive oil and season well with sea salt. Return to oven to roast for 45 minutes until charred and golden all over.

  4. Remove from the oven. Spoon some garlicky yoghurt onto on a serving plate and pop the cauliflower on the top. Drizzle with tahini and the chimicurri.

  5. Cut into wedges and enjoy!
