Heat your oven to 150˚C/130˚C fan/gas mark 2.
Peel and roughly chop the onion, then crush the garlic cloves.
Fry onion and garlic in olive oil until softened.
Add chilli flakes, fennel seeds, and brown sugar; cook until sugar has melted.
Stir in tomato ketchup and soy sauce; simmer for 10 minutes until thickened.
Place pork spare ribs in a roasting tray, pour sauce over ribs.
Cover tray with foil, bake at 150˚C for 2 hours, then at 180˚C for 30-45 minutes uncovered.
Let the ribs cool before serving with napkins.
