Purification: Place the 1.55kg of chicken drumsticks in a pot on the natural gas range. Cover with cold water and bring to a hard boil for 5 minutes to remove surface proteins and impurities. Drain and rinse under cold running water.
Par-Cooking: Place the potato chunks in a microwave-safe glass dish with 30ml of water. Use the LG LMC1050ST Smart Inverter on Power Level 8 for 4 minutes. This ensures the potatoes reach a temperature where the core softens without the exterior eroding during the braise.
Sauce Emulsification: In the mixing bowl, combine the 5 tbsp Gochujang, soy sauce, maple syrup, white wine, sesame oil, garlic flower paste, and ginger. Whisk until the Gochujang is fully integrated into the liquids.
Integration: In a clean pot on the gas range, combine the blanched chicken, par-cooked potatoes, carrots, onions, and the modified sauce base. Add 450ml of water.
Primary Braise: Bring the mixture to a boil over high heat. Once boiling, reduce the gas output to medium. Cover and simmer for 30 minutes.
Reduction Phase: Remove the lid. Increase heat to medium-high. Cook for an additional 15-20 minutes. Because of the higher Gochujang content, stir frequently to prevent the sugars from caramelizing too quickly on the bottom of the pot. The sauce should be thick and coat the back of a spoon.
Seasoning: Perform a final taste test. Add Kosher salt only if required.
Service: Garnish with green onions and a final application of Mediterranean pink salt for textural contrast.
