High Protein Asparagus Soup With Cottage Cheese
  1. Heat oil in a soup pot over medium heat. Add onions and cook for 5 minutes. Add garlic and cook for another 5 minutes.

  2. Add all remaining ingredients to the pot except for the cottage cheese. Simmer for 15-20 minutes, until all the veggies are soft and tender.

  3. Remove the parmesan rind from the soup. Add soup to a blender along with cottage cheese and blend until smooth. Alternatively you can blend with an immersion blender.

  4. Serve and enjoy.
