Heat the Dutch oven over medium heat and add olive oil. When warm, add diced onion and bell pepper. Cook until softened.
Add minced garlic and stir for one minute until fragrant.
Add lean ground beef or turkey. Cook until browned, breaking it into small pieces with a spoon.
Season with chili powder, cumin, smoked paprika, salt, and pepper. Stir to coat the meat evenly.
Add black beans, kidney beans, diced tomatoes, crushed tomatoes, and broth. Mix well.
Bring the mixture to a simmer. Reduce heat and cook for about 20 minutes. This allows flavors to blend and the chili to thicken.
Taste and adjust seasoning if needed. Add more broth if you prefer a thinner consistency.
Serve warm with toppings such as chopped green onions, Greek yogurt, or avocado.
