Prep the Oven and Pans: Preheat your oven to 350°F (175°C / 160°C Fan). Grease the bottom of two 7-inch or 8-inch round cake pans and line them with parchment paper. Do not grease the sides.
Whip the Eggs and Sugar: In a large bowl using an electric mixer, beat the room-temperature eggs and sugar together on medium-high speed for about 5 to 8 minutes.
Add the Wet Ingredients: Gently fold in the vanilla extract, milk, and melted butter (or oil) until just combined.
Fold in the Dry Ingredients: Sift the flour, baking powder, and salt together. Gently fold this dry mixture into the wet batter using a spatula.
Bake: Divide the batter evenly between your prepared pans. Bake for 25 to 30 minutes, or until the top springs back when lightly touched and a toothpick inserted comes out clean.
