Make the Tofu 'Feta' by mixing the tofu, miso paste, olive oil, apple cider vinegar, nutritional yeast, and oregano.
Sauté the onion and garlic in avocado oil.
Add the spinach, dill, and parsley and cook until wilted.
Layer the phyllo pastry and fill with the spinach mixture and tofu 'feta'.
Bake until golden brown.
