Zucchini Spinach Fritters
  1. In a large mixing bowl, place eggs, garlic, lemon zest, spinach & herbs and whisk until combined.

  2. Mix in flour & bicarb, then fold in zucchini and feta until just combined.

  3. Heat oil on a fry pan over high heat.

  4. Add a large scoop of fritter batter to the pan and cook on each side for a minute or until golden and crispy.

  5. Repeat with remaining mixture.

  6. Serve with tzatziki & enjoy!
