Cauliflower And Chickpea Salad
  1. Mix the cauliflower, chickpeas, and onion with the olive oil and seasonings

  2. Spread them on a baking sheet and roast at 400°F for 20-25 minutes

  3. Remove from the oven and add the pomegranate seeds, almonds, mint, and parsley

  4. Add the olive oil (or tahini) and lemon juice, mix well, and serve
