Sweet Potato and Chickpea Patties
  1. Preheat oven to 400 degrees F.

  2. Roast cubed sweet potatoes and chopped red onion at 400 degrees F for 20-25 minutes (tossing halfway) or until sweet potatoes are tender and you can easily mash.

  3. In a food processor, add chickpeas and mash them by pulsing a few times until mostly mashed. Add the mashed chickpeas in a large mixing bowl.

  4. In the same food processor, add nuts or seeds along with rolled oats. Pulse a few times to grind. Add into the mixing bowl.

  5. Once sweet potatoes and red onion are done cooking in the oven, add them separately in the food processor to pulse a few times to mash. Add them in the mixing bowl.

  6. Add smoked paprika, garlic powder, and salt into the bowl and mix everything well to create the burger mix.

  7. Using your hands, create burger patties (around ⅓ cup each, or less, depending on preference). This mixture should create roughly 8 patties.

  8. Line a baking sheet with non-stick parchment paper and place burger patties on top.

  9. Bake at 400 degrees F for a total of 30-35 minutes: carefully flipping them over after 20 minutes then baking for another 10-15 minutes.

  10. Allow to cool for about 10-15 minutes before assembling into a burger with your favourite burger toppings.

  11. To store, wrap them individually and store them in the fridge for up to 4-5 days or in your freezer for up to one month.
