Set oven to 350°F and line two large baking sheets with parchment paper.
In a medium bowl, combine softened cream cheese, green onions, diced jalapeños, bacon, pepper jack, and cheddar cheese until smooth.
Spoon one rounded teaspoon of the filling into each tortilla scoop.
Sprinkle a little more cheese and bacon on top if desired.
Place filled scoops on prepared sheets and bake 8–10 minutes until filling is bubbly and lightly golden.
Transfer Jalapeño Popper Bites to a serving platter and serve hot with ranch or sour cream.
