Keto Chocolate Peanut Butter Bars
  1. Preheat the oven to 350 degrees F and line a 9x9 inch baking pan with parchment paper.

  2. In a medium bowl, combine almond flour and sweetener.

  3. In a small bowl, combine vanilla extract and melted coconut oil, then mix it into the almond flour mixture to form a crumbly dough.

  4. Press the cookie dough into the prepared pan and bake for about 10 minutes or until the edges are golden brown.

  5. Let the cookie layer cool before making the peanut butter layer.

  6. For the peanut butter layer, mix sugar and peanut flour in a medium bowl, then add vanilla and peanut butter.

  7. Spread the peanut butter dough evenly over the cookie layer in the pan.

  8. For the brownie layer, melt chocolate chips and coconut oil in a medium bowl in the microwave, then add sweetener and mix. Spread the chocolate over the peanut butter layer.

  9. Allow the chocolate layer to cool completely and become solid before cutting into bars. Refrigerate if necessary.

  10. Use a large chef’s knife to cut the bars into squares. Store in the refrigerator.
