Smashed Green Beans With Parmesan & Balsamic
  1. Preheat oven to 450°F with rack in upper third position. Toss trimmed green beans, 1 tablespoon oil, ¼ teaspoon pepper and ⅛ teaspoon salt together on a large rimmed baking sheet until fully coated; arrange in an even layer.

  2. Roast until browned, about 10 minutes. Using a rolling pin or the bottom of a measuring cup, smash the beans.

  3. Combine ⅓ cup Parmesan and 2 tablespoons garlic in a small bowl. Sprinkle over the beans. Roast until the cheese is melted and crisp, 8 to 10 minutes.

  4. Transfer to a large serving platter. Drizzle with 1½ tablespoons balsamic glaze.
