For extra flavor, you can opt to sear your pork chops first. If you are not searing your pork chops, skip to step 3:
Add some butter or olive oil to a skillet over medium-high heat. Season the pork chops liberally with salt and pepper, then brown on both sides, about 3 minutes per side. Remove from heat and set aside.
Scatter chopped onion in the bottom of your slow cooker.
In a medium bowl, stir together the maple syrup and Dijon mustard. Add the pork chops to this mixture and turn to coat. (If you skipped searing the pork chops, season with salt and pepper here.)
Arrange pork chops over the onions in the slow cooker, then pour any remaining maple syrup mixture over the top.
Cover and cook until pork chops are cooked through, about 4-6 hours on low or 2-3 hours on high.
Season to taste with salt and pepper and serve drizzled with sauce. Enjoy!
