Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly spray with olive oil.
In a bowl, combine cottage cheese, egg, almond flour, garlic powder, salt, and Italian seasoning (if using). Mix until a thick dough forms.
Scoop tablespoon-sized portions of dough and roll into small balls. Place them on the baking sheet and lightly mist with olive oil spray.
Bake for 14–16 minutes, until the bites are crispy and lightly golden on the outside.
Enjoy on their own or with marinara, ranch, or a garlic yogurt dip.
