Cream Pie - Gluten Fee / Low Sugar
  1. Crust: Grease 9" Pan.

  2. Preheat oven to 350.

  3. Place flour, sugar, baking soda and salt in food processor and pulse several times.

  4. Add the egg and vanilla. Add pieces of butter or coconut oil over the top.

  5. Pulse until mixture forms a ball.

  6. Bake 8-12 minutes. If baking again with a filling bake until just dry. If making a pie not requiring a second bake, then bake until the crust is lightly golden around the edges.

  7. Cream Pie: 1. In a medium size mixing bowl, beat softened cream cheese until smooth.

  8. Add in powdered sugar, lemon juice, and vanilla until combined.

  9. Add thawed cool whip or add whipped heavy cream until just combined.

  10. Add the fruit or berry and mix into the cream.
