  1. Add the shallot, garlic, balsamic vinegar, honey or sugar, Dijon mustard, and salt to a blender.

  2. Blend until smooth.

  3. While blending, slowly stream in the olive oil to emulsify.

  4. Taste and adjust to taste.

  5. This keeps in the fridge for up to 2 weeks.
