  1. In a large skillet, heat olive oil over medium-high heat.

  2. Add chicken and cook until browned.

  3. Remove chicken from skillet and set aside.

  4. In the same skillet, add mushrooms, onions, and garlic.

  5. Cook until vegetables are tender.

  6. Stir in rice, chicken broth, thyme, salt, and pepper.

  7. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

  8. In a separate saucepan, melt butter over medium heat.

  9. Whisk in flour to create a roux.

  10. Gradually whisk in milk, stirring constantly until thickened.

  11. Remove from heat and stir in Gruyère cheese until melted.

  12. Combine chicken, rice mixture, cheese sauce, and spinach in a large baking dish.

  13. Sprinkle additional Gruyère cheese on top.

  14. Bake at 375°F for 25-30 minutes, until bubbly and golden brown.
