White Chicken Chili
  1. Heat 1½ tbsp oil in a pot over medium heat. Add onions and jalapenos then cook until softened, about 4-5 minutes.

  2. Add garlic and cook until fragrant, stirring occasionally, about 1 minute. Transfer onion mixture out of pot and set aside.

  3. Heat 1½ tbsp oil in the same pot. Add chicken and sear both sides until browned, about 2-3 minutes per side.

  4. Add onion mixture, chili powder, cumin, salt, red pepper, corn, beans, and broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes.

  5. To serve, break up beans with the back of a spoon to thicken chili. Stir in cream.
