Heat some neutral oil in a pan and in 2 or 3 batches sear your prawns for 2 mins on each side and set aside (don’t over crowd the pan)
Add your butter to the same pan and sautee your onion, garlic, coriander, ginger & chilli for 3 minutes.
Add your spices and mix for 1 minute.
Pour in your coconut cream and let that simmer for 2 minutes.
Add your prawns back in mix and add your choice of green. Mix for 1-2 minutes and garnish with some spring onions.
