Heat a large pan over high heat and add the oil.
As the pan warms rub the pork loin with Cajun seasoning and salt.
Add the pork to the pan and sear on all sides.
Cut the each collard greens in half lengthwise and remove the hard vein. Roll them up and slice them about ¼ in wide. Place them in the bottom of the slow cooker then place the seared pork on top of the greens.
Melt the butter in the same pan you seared the pork and add the shallots, garlic, thyme, red pepper flakes, liquid smoke. Stir together and pour directly over the pork.
Place the lid on the slow cooker and cook on low for 5-6 hours.
Pull out the pork and cover with foil and allow to rest for 10 minutes.
Slice the pork and serve with the greens.
