  1. Marinate 48oz boneless skinless chicken thighs with 180g sweet chili sauce, 90g soy sauce, 30g rice vinegar, 15g sesame oil, and black pepper

  2. Cook the marinated chicken thighs

  3. Cook 240g sushi rice (raw weight)

  4. Mix cooked rice with 200g plain skyr or Greek yogurt, 30g sriracha or gochujang, salt, and garlic to taste to create creamy spicy rice

  5. Assemble burritos by filling 10 burrito tortillas with cooked chicken, creamy spicy rice, finely sliced green onions, and any additional toppings of choice

  6. Wrap burritos and freeze

  7. To reheat: Remove from freezer, wrap in paper towel, microwave for 2 minutes, then air fry at 375°F for 6-8 minutes to crisp tortilla, or pan fry
