Shred the carrots and pat dry, removing extra moisture
Add all of the carrot cake ball ingredients into a food processor and pulse until a sticky dough is formed
Take a cookie dough scoop and scoop out a serving of the carrot cake mix
Form into a ball and add to a plate lined with parchment paper
Repeat until you have no more dough
In a small bowl, add the white chocolate chips and coconut oil
Microwave for 30 seconds, stir, and repeat until melted
Dip each carrot cake ball in the icing or drizzle it on top
Put the carrot cake balls in the fridge and refrigerate for at least 1 hour
Remove and enjoy
