  1. In a blender, combine the cilantro, spinach, almonds, jalapeños, coriander,

and cumin. Pour in ¾ cup olive oil and the lemon juice and add ¼ teaspoon

salt. Blend until smooth. Taste and adjust the seasoning as needed. Store in

the fridge for up to 1 week.
