Pressing slightly, slice the meat about 1 inch from the bottom, rolling it open as you go.
Pulse garlic in a food processor till minced. Add spinach, ricotta, parmesan, lemon zest, 2 tbsps. olive oil, salt & pepper till combined.
Spread a ¼ - ½ inch layer of spinach cheese mixture over pork loin.
Starting on the short end, roll the pork tucking in the filling as you go.
Place the meat over kitchen twine, wrapping around the roll & tying firmly. One stretched out arm length should be plenty.
Place on a sheet pan, gently rub roll down with remaining olive oil & sprinkle more kosher salt on top.
Roast until pork registers at 140 degrees. Remove twine from meat & allow to rest tented on a cutting board for 15 minutes. Cut into 1” thick slives to serve.
