Preheat the oven to 200°C (fan setting).
Slice the potatoes into thin slices (using a mandoline, for example) and arrange the slices into 4 squares on a baking sheet lined with parchment paper.
Brush with oil, sprinkle cheese over the top, and add a dash of oregano.
Bake the potato wraps for about 10 minutes.
