In a small saucepan over medium heat add in the olive oil and add the carrots & celery cook for 2 minutes. Add in the broth, chicken bullion, and black pepper. Bring to a boil.
Add in the bok choy and gyoza and cook for 2-3 minutes until the gyoza have warmed through. Add in the soy sauce and any additional salt or pepper to taste.
Top with green onions and enjoy!
