Stir the lime juice into the milk and let it stand for 5–10 minutes to make homemade buttermilk.
Whisk together the egg, homemade buttermilk, and olive oil.
In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Add the dry ingredients to the wet ingredients and stir just until combined. A few lumps are perfectly fine—don’t overmix!
Scoop about ½ cup of batter onto a hot, buttered griddle.
Cook until bubbles form and the edges begin to set. Flip and cook until golden brown.
