Strawberry Lychee Horchata
  1. Soak 1 cup of rice in 3 cups of hot water and 4 cinnamon sticks, cover and let it soak overnight

  2. When ready to make dice up half of the strawberries and save the other half for the purée, dice up 1 can of lychees as well

  3. Combine the other half of the strawberries and 1 can of lychees in a blender and blend it up, this is your fruit purée

  4. Then blend up the soaked rice along with all the water that it was soaked in and the cinnamon sticks, then strain it

  5. Add 1 can of evaporated milk, 1 can of condensed milk and 1 ½ cups of milk into the strained rice mixture. Taste and adjust to your liking, if it's too sweet add more milk and if it's not sweet add more sugar

  6. Combine the fruit purée into the horchata and give it a good stir to combine it. Stir it every time you serve & serve with the chopped fruit & ice.
