Preheat oven to 350°F.
Add dry ingredients to one bowl, whisk in between each dry ingredient.
Add in oil, milk and vanilla and mix about until about 75% incorporated, then mix in your zucchini to batter.
Spread into a 9x13 glass casserole dish (can grease if preferred but unnecessary).
Bake at 350°F for about 45 minutes.
Serve with ice cream or milk, no icing required.
