On a cutting board, cut the ends off the lemons. (I peel mine, too, but you can leave the peels on. I find them too bitter.) Slice the lemons as thinly as possible.
Peel the ginger and slice as thinly as possible.
In a quart jar or other large glass container, layer one layer of lemon slices topped with a layer of ginger slices. Sprinkle turmeric on top.
Repeat layers, with turmeric on top of each layer, until lemon and ginger slices are gone.
Muddle the lemons and ginger with the handle of a wooden spoon or something similar if you don't have an actual muddler.
Pour honey into the jar and stir thoroughly.
Put the lid on the jar and allow to sit on the counter for 36± hours. It's fine to use some in the meantime.
After sitting out for 36± hours, the mixture can be safely stored in the refrigerator for six to eight months. (I use mine up in about a month.)
To Drink: Depending on how strong you want it, pour desired amount into a preheated cup and add boiling water. I make mine half hot water and half Lemon/Ginger mix.
Stir and drink. Using a cup with a lid helps to filter out the solid bits if you don't want to drink them. I eat the lemons but not the ginger slices.
