Green Chicken Chili
  1. Season chicken thighs with salt.

  2. In a large pot, combine the seasoned chicken thighs, tomatillo-based salsa verde, fire-roasted hatch chilies, garlic cloves, jalapeno, cilantro leaves, cumin, chipotle, black pepper, oregano, and salt.

  3. Simmer everything until chicken is tender.

  4. If using chicken breast, simmer until cooked through.

  5. Add white kidney beans and continue to simmer until heated through.

  6. Serve garnished with sour cream and avocado.
