Combine seasoning mix in a container with a lid where it will last for up to 2 months.
Heat oven to 425 Degrees F.
Add a neutral oil and 1-2 teaspoons of cornstarch to 5-6 peeled and diced potatoes, mix on a sheet pan or two, don't overcrowd the potatoes or they won't crisp up properly.
Add a generous amount of the seasoning to taste and mix again.
Roast potatoes for 35-50 minutes, stirring the potatoes in the pan halfway through so they crisp evenly.
When they are done they will be tender and deeply golden.
Add a pinch more seasoning to cooked potatoes if you'd like or serve straight away.
