Slice your chicken breasts on the side that has the fold on the bottom (be careful not to slice it all the way)
Add some pesto on the bottom half of the chicken, a few tomato slices and a sprinkle of freshly grated mozzarella cheese
Close the chicken and secure it with some toothpicks so the filling doesn't ooze out
In a small bowl, mix together: olive oil, salt, pepper, garlic powder, oregano, and paprika
Brush this mixture all over the chicken until evenly coated
Add the chicken to an air fryer and cook at 400 degrees for 12 minutes, flipping halfway
Remove the toothpicks before serving
