  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. Pat the cod fillets dry with paper towels, season with sea salt & black pepper and then coat each fillet in the flour, making sure they´re evenly coated all around

  3. Once the oil is hot add in the cod fillets, all in a single layer, fry for 1 minute per side, then remove from the pan and set aside

  4. Using the same pan with the same heat, add in the onion (roughly diced) and the garlic (thinly sliced), mix with the olive oil, after 4 to 5 minutes and the onion is translucent, add in the can of tomato sauce, season with sea salt, black pepper and a little white sugar, mix together, then add in the bay leaves and lower to a low-medium heat, simmer without mixing

  5. After 10 minutes and the sauce has slightly thickened, add the cod fillets back into the pan, once again in a single layer, then gently flip each fillet that way they´re fully coated in the sauce, place a lid on the pan and simmer until the cod is cooked through, between 3 to 5 minutes

  6. Serve directly out of the pan or transfer into serving dishes, sprinkled with chopped fresh parsley, enjoy!
