    Making the Noodles

  1. Add 11 Ounces of strong bread flour and ½ tsp of salt to a mixing bowl and mix.

  2. Add the 4.5 ounces of water into the flour.

  3. Use chopsticks to stir and knead the flour into a dough, about 8 minutes.

  4. Cover the dough and let it sit for 30 minutes.

  5. Knead the dough again for 5-8 minutes using the folding technique.

  6. Cover the dough and let it sit for another 30 minutes

  7. Roll the dough into 1-2 mm thick sheets.

  8. Apply flour on both sides of the sheet to prevent sticking.

  9. Fold the sheet and cut it into 1-2 mm thick noodles.

    Preparing the Noodles after they are made.

  1. Boil the noodles for 2-4 minutes.

  2. Drain the noodles and add soy sauce, black vinegar, dark soy sauce, ginger, garlic, chili flake, spring onion.

  3. Heat 2.5 tbsp of vegetable oil and pour it over the noodles. Mix everything together. Or mix it all in a pan and stir fry.
