Preheat air fryer to 350 F;
Peel and add garlic cloves to a small cocotte, along with olive oil, salt, pepper, thyme and cover; cook for about 30 minutes;
Preheat oven to 425 F;
Add peppers, red onion, capers, garlic confit, garlic oil, white wine, Italian seasoning, lemon zest + juice to a pan and roast for about 20 minutes; nest the sardines into the veggies along with some of the juice from the can and roast for another 10 minutes; finish with parsley;
Season baguette crostini with olive oil, salt and pepper and toast on a pan or a griddle; then rub with a garlic clove;
Serve atop crostini or simply dip in and enjoy!
