In a large pot sauté the sausage for 5–6 minutes until browned; remove and set aside.
Melt butter in the pot and cook onions until translucent; add garlic and sauté until fragrant.
Add broth, water, potatoes, salt, and pepper. Bring to a boil and cook until potatoes are tender.
Stir in chopped kale and heavy cream; let the broth become creamy.
Add sausage back into the pot; taste and adjust seasoning as needed.
Top with parmesan cheese and/or bacon if desired.
