Finely dice onion, bell pepper, and garlic
Squeeze out water from diced vegetables
Add vegetables to lean ground chicken with coriander and seasonings
Mix well until chicken changes colour
Spread mixture on a greased sheet pan
Divide into 8 kebabs using a spatula
Bake at 190°C for 20-25 minutes until golden brown, draining juices halfway through
Mix Greek yoghurt, light mayo, garlic powder, dried dill, salt, pepper, and lemon juice for garlic sauce
Add splash of water to sauce for desired consistency
Prepare salad with red onion, cherry tomatoes, cucumber, and coriander
Assemble kebab wraps with sauce, two chicken kebabs, salad, and more sauce
For meal prep, store components separately and wrap kebabs in foil for up to 5 days
Reheat in air fryer or pan for a few minutes before assembling
