Lemon Pepper Wings

Wings:

    Homemade Lemon Pepper:

    To Finish:

  1. Heat the oven to 425°F/220°C. Pat wings extremely dry with a paper towel. Toss with baking powder and salt. This dries the exterior and adjusts the pH so they get crispier. Science stuff.

  2. Arrange skin-side up on a wire rack over a lined sheet pan. Bake for 25 minutes.

  3. Flip and bake another 20-25 minutes until deeply browned, crisp and at least 165°F internally. Wings can handle temps up to 185°F so don't be afraid to cook them a bit longer until they're the color you like.

  4. Seasoning: Combine black pepper, salt, garlic powder, onion powder, dried lemon zest, citric acid and sugar.

  5. Toss hot wings with melted butter. Immediately add lemon pepper seasoning a little at a time. Finish with fresh lemon zest.

Storage & Reheating:

Store: Refrigerate cooked wings for up to 4 days.

Reheat: Air fry at 375°F/190°C for 5-7 minutes or bake at 400°F/200°C for to 10 minutes.
