Fried Gram Flour Courgette/zucchini
  1. Boil whole courgettes in well salted water for around 5 mins.

  2. Slash and press courgettes over a colander.

  3. Mix gram flour through with turmeric, curry powder, salt & pepper to taste.

  4. Whisk together 2 eggs, big handful grated cheddar cheese, pinch of salt & plenty of pepper.

  5. Drench the slashed cooled pressed courgettes in the spiced gram flour.

  6. Drench courgettes in the egg & cheese mix.

  7. Drench courgettes a final time back in the gram flour mix.

  8. Get a good frying pan hot over a moderate heat.

  9. Add a shallow film of oil.

  10. Fry until crisp, golden & piping hot.

  11. Serve with hot mango pickle, fresh chopped green chilli & lemon wedges to squeeze all over.
